This twist on Green Thai Broccoli Curry includes all the goodness of the normally very boring broccoli and a kick of carbs from brown rice and a delicious flavour – all made in less than 15 minutes. We rotate a few extra ingredients like courgette, carrots, beans or bean sprouts depending what else is in the cupboards.
- 2 Chicken Breasts
- ½ Cup Brown Rice
- 10 small Red Radish
- 1 Whole Broccoli
- 1 Tin Coconut Milk
- Green Thai Curry Paste
- In separate bowls, set both the rice and broccoli to boil. Depending on the rice sometimes this one needs to go on a little be earlier to allow a longer cooking time.
- Cut the chicken breast and radish to bite size pieces and as the rice is almost done start to fry off the meat.
- As the chicken is almost cooked we’re going to drain the broccoli and add it to the pan along with the radish and coconut milk (we tend to add the cream and not all the water from the can). Keeping the rise separate and read to serve.
- Bring the coconut milk to temperate and add a dash of green thai curry paste, stir everything in and serve alongside the brown rice.
