So you’re into fitness and not sure how to spice up your food? This dish delivers a twist on the classic gym go’ers Chicken and Broccoli dish, adding heaps of flavour and a little kick of spice. The dish will come in pretty close the the 40/30/30 nutritional ratio of Carbs/Protein/Fats that a good balanced diet is based on.
2 Chicken Breasts
½ Cup of Couscous
1 Whole Broccoli Tree
½ pack of Feta Cheese
Salt, Pepper and Harissa (or Paprika)
Chop the Broccoli into 3-4cm trees, remove the main stalk and slice it thinly then put the whole lot to boil for 3-4 mins until tender
Boil water and set your Couscous to work along with a dash of salt, good pinch of Harissa and Black Pepper.
Chop the Chicken to bite size chunks and the courgette into 5mm wide circular slices, Fry them both of for 5-6 mins on a high heat until the chicken is cooked through.
Chop the Feta into 1m cubes and put to one side.
Drain the broccoli and mix everything into a large mixing bowl. Mix thoroughly so the cheese becomes your sauce – add some salt/pepper/oil to taste and enjoy…
